Janice's Pineapple Walnut Coffee Cake
9 X 13 Pan – Grease and Flour
Preheat oven to 350
2 cups Sugar
2 Eggs
Beat together then blend with following:
(1) 20 oz. can crushed pineapple with juice
2 cups Flour
2 teaspoons Baking Soda
2 cups Walnuts (either black or English)
Bake for 40 minutes – test for doneness with toothpick
Topping
1 Stick of Butter (a must!)
8 oz. Cream Cheese
Melt above 2 ingredients together – add rest of ingredients
1 teaspoon Vanilla
2 cups powdered Sugar
Use mixer to blend all ingredients
Poke holes in cake (using a meat fork or other available item)
Pour topping over warm cake!
