Trudy's Cranberry Christmas Cake

 

2 Cups sugar
3 eggs
3/4 Cup butter, softened
1 tsp vanilla
2 Cups all-purpose flour
12 oz. fresh cranberries

 

1. Preheat oven to 350.
2. With mixer beat eggs with sugar 5-7 minutes, until slightly thickened.
3. The sugar and egg mixture should form a ribbon when you lift the beater out of the mixture.
4. Add butter and vanilla. Mix two more minutes. Stir in flour until just combined.
5. Add cranberries and stir in with a spoon.
6. Spread in a buttered 9 x 13 pan.
7. Bake 40-50 minutes or until very lightly browned and toothpick comes out clean.
8. Sprinkle the top with powdered sugar and cool before cutting. Cut in small squares.
